I belonged to the group of people who avoided beets. During meals I would actively steer clear of beets while I kept a silent hope they would not show up.
But the first time when I tried this salad I discovered that I actually loved beets.

My Favorite Beet Salad
Ingredients:
- 2–3 beets, grated
- 2–3 carrots, grated
- 1 apple, grated
- 1–2 cloves of garlic (grate for stronger flavor, chop for milder)
- 1 cucumber, sliced into rounds
- 3–4 tbsp goat white cheese, crumbled
- 3 tbsp pomegranate seed
- Parsley, to taste
- Olive oil, to taste
- Salt, to taste
- Black pepper, to taste
- Apple cider vinegar, to taste
- Half a lemon provides lemon juice (but you can add more if you want it tangier).
- Balsamic vinegar (optional, but recommended)

Instructions:
- Place the grated beets, carrots and apple in a large bowl to create the salad.
- Add garlic, either grated for a strong, bold flavor or finely chopped for a softer bite.
- Toss in cucumber slices and a handful of chopped parsley.
- Season generously with salt and black pepper.
- Drizzle with olive oil to your taste.
- Squeeze in the lemon juice and splash in some apple cider vinegar.
- A few drops of balsamic vinegar should be added for better depth of flavor.
- Mix everything well and let it sit for 5–10 minutes before serving.
The flavors will mix perfectly during this time.
